Of course there will also be create-a-fighter mode much like the Fight Night one, only better.
And the right analog WILL be used for fight moves.

Joe "Daddy" played an intricate role in helping THQ with the grappling in UFC 2009 Undisputed, as he and fellow Lightweight Gray Maynard took part in a video shoot at Cobra Kai Jiu-Jitsu in Las Vegas under the watchful eye of Marc Laimon. THQ ran the two UFC competitors through the paces of several jiu-jitsu techniques that are commonly seen in MMA competition and that the game publisher knew needed to be accurately recreated in the upcoming game. The goal was to capture, step-by-step, how various transitions, sweeps, submissions, and escapes are performed utilizing multiple camera angles so that they could accurately recreate those motions in game. THQ felt that having Laimon on-site was key because he made sure THQ captured all of the various moves from the necessary angles. With the multiple angles, the animators were able to easily step through each move from different angles to see just exactly where hand or foot placement was being used, and thus able to make sure that important aspect of the sport was properly recreated in the videogame.

Yea, they give you a code to unlock both. Kind of like they did for the ppl that reserved Gears of War 2, how you could get the gold hammerburst I believe it was
